Crystallization of honey. Why does honey crystallize?.

Honey crystallizes because it is a supersaturated solution. The amount of glucose and fructose present in honey, and the humidity of it, are the main factors that determine the crystallization of honey. This state of saturation occurs because there is so much sugar in honey (more than 70%) compared to the amount of water (often less than 20%).
